Cooking Class

by Mai Trang @ Saigon and Around – Discovery Indochina Tour Vietnam Cambodia Laos and Myanmar

Perhaps Asia’s greatest culinary secret, Vietnamese food is on the radar but hardly a global phenomenon. Essentially it’s all about the freshness of the ingredients – chefs shop twice-daily to source just-picked herbs from the market. The result? Incomparable texture and flavour combinations. For the Vietnamese, a meal should balance sour and sweet, crunchy and silky, fried and steamed, soup and salad. Wherever you are, you’ll find exquisite local specialities whether that be the ‘white rose’ of Hoi An, the canh chua of the Mekong Delta or good ol’ pho of the north. Follow the suggestions below for a culinary tour you’ll never forget.

No doubt, Siargao Island has a reputation when it comes to surfing. But admit it, the intimidating waves sometimes only allow professional surfers to enjoy. Cloud 9 wasn’t coined if not for the thick waves and hollow tubes that can go as high as nine-foot. However, I didn’t find myself riding a board and doing […]

Cu Chi Tunnels

by Mai Trang @ Saigon and Around – Discovery Indochina Tour Vietnam Cambodia Laos and Myanmar

Cu Chi is about 40 km northwest of Ho Chi Minh City in Southern Vietnam. The Cu Chi Tunnels are an elaborate underground community made up of 250 km of tunnels and chambers below the city.

The tunnels were dug with simple tools and bare hands during the French occupation in the 1940s, and further expanded during the Vietnam War in the 1960s to provide refuge and a defensive advantage over the American soldiers. Despite all the bombings in their town, the Cu Chi people were able to continue their lives beneath the soil, where they slept, ate, planned attacks, healed their sick, and taught their young. Some even wed and gave birth underground, but over 10,000 lost their lives here.

Chris Shepherd's foodie tour of Vietnam

Chris Shepherd's foodie tour of Vietnam

Houston Chronicle

James Beard Award-winning chef Chris Shepherd, whose menu at Underbelly restaurant is inspired by Houston's melting pot of cuisines, recently traveled to Vietnam. Vietnam's largest city, formerly known as Saigon, can be overwhelming with its sights, sounds and buzzing motorbikes - especially for culinary-curious, first-time visitors from Texas. First there were snails - tiny ones cooked in coconut milk, large ones cooked in chiles and garlic - at Oc Co Truoc, a makeshift restaurant in a small alleyway set up with a few charcoal grills and little chairs. [...] in quick succession, we met a captivating woman selling three different types of rice porridge on a street corner and encountered another woman, outside Ho Chi Minh's April 30 Park, who was making a toasted rice paper filled with ground pork, ground shrimp, herbs and quail egg. Somewhere along the way - between grilled pork cheeks wrapped in mustard-green leaves and a visit to Kim Salon for a $7 hair/face wash - Calvin got a serious look on his face and said, It's open now. There was a trip to Quoc Ky near the chaotic Ben Thanh Market, where I had a bowl of pho that was perfect in every way - imagine your favorite bowl of pho, then add a roasted peanut element to it. A short flight from Ho Chi Minh City, Phu Quoc is a small island on the southwest coast of Vietnam, with beautiful white-sand beaches and a growing number of resorts. Specifically, I wanted to visit Red Boat, a small-batch fish-sauce company that uses high-quality anchovies caught right off the coast. [...] we met with Red Boat owner Cuong Pham, who left Vietnam in 1979 to come to the U.S. After working in the tech industry for years, he decided to make a change and come home. Over a lunch of grilled squid and roll-your-own raw sardine spring rolls at Song Xanh restaurant, he told us why. (The anchovies are salted right after they're caught to stop them from spoiling.) For the transfer to land, we met the fishing vessel, employees put a wooden plank in between the two boats, then slid massive buckets filled with little black anchovies across. Link also took us to Cafe Duy Tri, one of the oldest cafes in Hanoi, where he showed us a coffee that's famous in the region: coffee beans that are eaten by a weasel, then excreted by the weasel and harvested. Apparently, the weasel only eats the best beans, and then the acid in its stomach breaks down the outer coating of the bean, releasing a natural chocolate flavor. Cha Ca, or fish pieces marinated in turmeric and sautéed at your table with green onions, dill and cilantro, then wrapped in rice paper with more herbs and peanuts. Cruising on the bay, we were surrounded by gorgeous green water and giant limestone islands, and enjoyed checking out a pearl farm and exploring a cave filled with stalactites and stalagmites. Before dinner, there was a mini cooking class where employees showed us how to make crispy spring rolls, which we ate later along with Goi Ga (chicken and cabbage salad), shrimp with coconut curry, and a beef and enoki mushroom soup. The flavorful pork broth bristled with crunchy wontons, roasted pork, sweet chile purée, and lots of fresh herbs and lettuce. Hoi An also is home to the wonderful Banh Mi Phuong, a little eatery that offers several different types of banh mi: roasted pork, chicken, bacon, cold cut and omelet, and additional combos. Nam Hai was so beautiful that we spent a lot of time there; we had a spa day, and ate several meals at the resort's ocean-view Vietnamese restaurant, which served a dish specific to the Da Nang region: Mi Quang, turmeric-scented rice noodles with pork, shrimp, herbs, shaved banana flower and chilies in a fish sauce-scented pork broth. Panko-dusted fish wrapped with lettuce and herbs, braised pork with coconut sticky rice, mango salad, green papaya salad and lots of fresh fruit for dessert.

Saigon City Tour

by Mai Trang @ Saigon and Around – Discovery Indochina Tour Vietnam Cambodia Laos and Myanmar

Ho Chi Minh City (HCMC) is Vietnam at its most dizzying: a high-octane city of commerce and culture that has driven the whole country forward with its pulsating energy. A chaotic whirl, the city breathes life and vitality into all who settle here – visitors cannot help but be hauled along for the ride.

From the finest of hotels to the cheapest of guesthouses, the classiest of restaurants to the tastiest of street stalls, the choicest of boutiques to the scrum of the markets, HCMC is a city of contrasts. Wander through timeless alleys to incense-infused temples before catching up with the present in designer malls beneath sleek skyscrapers. The ghosts of the past live on in buildings that one generation ago witnessed a city in turmoil, but the real beauty of (erstwhile) Saigon’s urban collage is the the seamless blending of these two worlds into one thrilling, seething mass, while a host of new and exhilarating tours get you way off-the-beaten track.

Saigon Along Riverside

by Mai Trang @ Saigon and Around – Discovery Indochina Tour Vietnam Cambodia Laos and Myanmar

The ‘rice bowl’ of Vietnam, the Mekong Delta is a landscape carpeted in a dizzying variety of greens and slashed with mighty waterways. It's a water world where boats, houses, restaurants and even markets float upon the innumerable rivers, canals and streams that flow through the region like arteries. At times you can quite simply lose sight of land.

The area is both riparian and deeply rural, but it's also one of Vietnam's most densely populated regions, with nearly every hectare intensively farmed. Visitors can dwell on southern charm in little-visited riverside cities, sample fruits traded in the colourful floating markets, or feast on home-cooked delicacies before overnighting as a homestay guest. Mangrove forests, sacred Khmer pagodas and off-the-beaten-track attractions round out the picture.

Wrap Up: November 2017

by Mimi McFadden @ The Atlas Heart

I can’t believe I’ve been back in California for over a month already. It has gone by super fast, probably because my schedule has been filled with plenty of work, family time, and catching up with my closest friends who live in the Bay. I tested out doing a sober month in November for the […]

Pa Ku San, Mother Mountain in the clouds

by asiacitytours @ Asia Locals | Vietnam – Laos – Cambodia – Myanmar – Thailand – Singapore – Malaysia – Indonesia and India

VietNamNet Bridge – Pa Ku San Mountain in Lao Cai Province has primitive forests covered in moss, forests full of maple trees and their colourful leaves, cliffs that startle with their steepness and, at times, all this is covered in a sea of mist. Through the mist: We reached the climax of our feelings. — […]

Cu Chi Tunnels & Saigon City Tour

by Mai Trang @ Saigon and Around – Discovery Indochina Tour Vietnam Cambodia Laos and Myanmar

And different from romantic Hanoi, Ho Chi Minh City (known as Saigon) has its own charm. Observe the dynamic life in the vibrant place which was once considered “Pearl of the Far East”, join in a unique mix of culture from many regions along Vietnam, all ensure you new interesting experiences.

Good Morning Saigon

by Mai Trang @ Saigon and Around – Discovery Indochina Tour Vietnam Cambodia Laos and Myanmar
