We are in the midst of a thoroughly January state of affairs:  We got home on New Year’s Eve from our trip to see B2’s parents in Honolulu, where I was lazier, more relaxed, and more rested than a parent with a toddler has any right to be (God bless grandmas), and in the midst of our post-Hawaii gloom, were all promptly felled by the Great California Flu of 2018.  Well, more accurately, I was felled by the Great California Flu of 2018, B2 was mildly sick, and B3 was sick for exactly one night before bouncing back to his same exuberant self, charging around the house while casting me mystified looks and wondering why his mom was being such a baby.   But even if it took some (me) longer than others, we’re getting back to normal now!  And thank goodness, because we are partway into 2018 and I still have so many wonderful cookbooks from 2017 to dig into.  This gem of a salad is from Neighborhood, by Hetty McKinnon (of Arthur Street Kitchen goodness).  Hetty has that special skill of crafting salads that manage to be fresh, filling, and flavorful all at once.  The salads in Neighborhood have never seen the inside of a shrinkwrapped bag of chilly iceberg mix (unlike, ahem, my kitchen), but are full of texture and flavor, the sort that aren’t relegated to the side of a plate but are a meal all their own, and make January healthful eating feel like a desire, not a burden. This pho salad is a case in point–in a total genius twist, Hetty manages to distill a bowl of traditional pho into a quixotic, punchy (and vegetarian!) dressing (which calls for the great fun of holding your onions and ginger over your gas stovetop and hoping you don’t burn the house down) that infuses rice noodles, peppery herbs, tofu, and slightly charred broccolini with the savory, sweet, and hearty flavors of their namesake, without the broth and, even more impressively, without the meat.  The slippery rice noodles contrast beautifully with the five-spice tofu (incidentally, maybe my favorite snack ever), and, to my carb-loving surprise, I found the broccolini to be the star of the show–surprisingly savory, with a satisfying crunch that truly makes the salad feel substantial.  The best part, though, is this:  If you, like me, happen to make this just before getting knocked out with a nasty cold,…

Hi friends! Are you having wonderful summers? Here are just a few odds and ends from ours — it’s mostly been a sunny mix of visits from friends, recipe testing and manuscript scribbling, baby cuddles, and the occasional baked treat. I have also rediscovered the glory of regular old ice cream sandwiches, that kind with all the hubbub about not melting, and may or may not have taken down a box in the last week — which is neither here nor there. More importantly, our monkey is now a silly little 9-going-on-10-month-old who has discovered crawling, and pulling up! He spends most of his time these days charging gleefully around the house, testing whether this time will be the time we finally let him touch that outlet (spoiler alert, it is not), keeping up a constant refrain of “dada,” and yelling when he’s pulled himself up on his baby gate but can’t figure out how to sit back down.  His favorite toys are none of his own toys and all of ours, so (1) phones, (2) videogame controllers, (3) the remote, (4) not the toy remote we bought to trick him. And seltzer bottles. He’s gobbling chunks of kabocha and purple sweet potato (when I don’t eat it all first — I demand to know how it is possible that a vegetable can taste like cookies and cream), gnawing on broccoli and cauliflower, and will suck on a mango pit for as long as you will let him.  His biggest smiles stretch his face wider than it is long.  It is true what they say — it really does just get better and better every day. (This doesn’t stop me from scrolling through old baby photos and wailing, “Look how chubby he used to be!  Look how squeaky he was!  Look how tiny!  Look how [insert every other adjective you can think of]!“  I miss him at every age already.  Does that mean it’s time for B4?  I kid.  (I kind of not kid.)) I hope your summers are all full of sunshine and delicious things!  The recipe for the blueberry hand pies, which taste pretty much like summer baked into a flaky heaven of a pastry, is here, and the golden focaccia, which is crisp on top and chewy but tender inside and may have ruined me for all other focaccia forever, here; the cake will be in this little…

This beloved noodle soup is a complete meal in itself and is best served for breakfast or lunch on a weekend. Because the simmering takes at least two hours, I like to prepare the broth a day ahead of time and keep it in the refrigerator, where it will last for three days. Many cookbooks call for it to be made with oxtail bones, but I prefer marrow bones and beef chuck, which is what pho cooks in Vietnam use. A good pho broth needs to be clear, not muddy and dark, certainly fragrant of beef, anise and ginger. You can serve this soup with several toppings, but the easiest ones to prepare at home are cooked and raw beef. To use broth that has been made in advance, bring it to a boil, then add fresh ginger to refresh it. Come serving time, get friends or family to help cook the noodles and assemble the bowls. Make sure that the broth is boiling hot and the bowls preheated. Allow about 1 part noodles to 3 parts broth for each bowl.

Hi!  In less than three days, we’re jumping on (or, more accurately, “squeezing a toddler and many bags and a stroller and a car seat onto”) a plane and heading to Hawaii for the first time since our two-bowl household became a three-bowl one.  There are aunties and uncles and cousins for Luke to meet for the first time, beaches to explore, galbi to chew on, and to say we–and even more, his grandparents–are excited would be an understatement.  Our fellow passengers are probably less excited, though they don’t know it yet.  (If you have any tips for entertaining a 14-month old in an enclosed space for five hours, I welcome them and our seatmates will thank you.) But first, cookies!  I had to restore some kind of holiday order to this place, lest we go the entire month of December without a post that is at least somewhat cookie-related.  So here’s a little round-up of some favorite holiday cookie recipes, some old and much-loved and some I’ve been meaning to try, plus an update on that classic to rule all classics, the chocolate chip cookie.  (Also, some gratuitous Christmas pajama photos, which have nothing to do with cookies.) I had no intention of sharing another chocolate chip cookie recipe here, because no one needs me to tell them how to make chocolate chip cookies when there are so many impeccable versions out there already (most recently, this ripply, thin-and-crispy beauty from Sarah Kieffer that has been taking the world by storm!)  But then I realized that the only CCC recipe here to date is the infamous David Leite New York Times recipe, which I continue to love but to which I’ve rarely adhered in the last five (!) years since I posted it, and it didn’t seem quite right to leave out the recipe that I actually make every time I crave this classic cookie.   So, here it is!  This one hews most closely to Tara O’Brady’s recipe from her cookbook Seven Spoons, and it stole my heart because it uses melted butter, meaning no waiting for the butter to come to room temperature or creaming it with the sugars (my two least favorite cookie tasks) and, therefore, cookies even faster; the cookies it makes are thick and hefty, with crisp tops and edges but velvety, fudgy innards, puddles of chocolate on top and striated ripples within, and, if you can bear to let the dough…

This beloved noodle soup is a complete meal in itself and is best served for breakfast or lunch on a weekend. Because the simmering takes at least two hours, I like to prepare the broth a day ahead of time and keep it in the refrigerator, where it will last for three days. Many cookbooks call for it to be made with oxtail bones, but I prefer marrow bones and beef chuck, which is what pho cooks in Vietnam use. A good pho broth needs to be clear, not muddy and dark, certainly fragrant of beef, anise and ginger. You can serve this soup with several toppings, but the easiest ones to prepare at home are cooked and raw beef. To use broth that has been made in advance, bring it to a boil, then add fresh ginger to refresh it. Come serving time, get friends or family to help cook the noodles and assemble the bowls. Make sure that the broth is boiling hot and the bowls preheated. Allow about 1 part noodles to 3 parts broth for each bowl.
