Belize Adventure: Xunantunich and Cahal Pech Maya Ruins Tour

by Anita @ Fearless Captivations

In Belize, we visited Ancient Maya ruins of Xunantunich and Cahal Pech. Here’s all the information about our day trip. Eating local food, exploring the underwater world, and relaxing at a resort are great Belize activities, but I like to include some history and culture into my trips. I hadn’t visited any ancient ruins in the Americas, so this day trip was another must-do. We took a tour through our resort and visited Xunantunich and Cahal Pechin in western Belize near the Belize and Guatemala border, about three hours away from the coastal town of Hopkins. Xunantunich Xunantunich (pronounced shoo-nan-too-neech) is Yucatec Maya for “Stone Woman.” The name comes from several sightings of a mysterious, ghost-like woman on the stone steps. These Maya ruins are known for its views when you climb to the top of the highest of the structures. Records of this Maya site date back to 250 AD. A British medical officer named Dr. Thomas Gann first explored Xunantunich in the 1890s. He later returned for excavations and unearthed many Maya treasures and artifacts. Since then, there have been several excavations, the latest in 2016 when one of the largest Maya burial chambers was found. Below you’ll see a re-built replica […]

There’s good, and then there’s oh my gosh, this bite is the best thing I’ve put into my mouth in a long time and I never want this dish to end. New restaurants open every month in Austin and it’s hard to keep up with where to go. If you’re looking for an Austin restaurant to try, here are some I think are worth the visit. Restaurants I went to three new-to-me restaurants that stood out from the many I tried this year. At these restaurants, there were many dishes that had me amazed and the service experience also had a lot to do with my favorable thoughts. Apis Restaurant We visited Apis Restaurant to celebrate a birthday and every dish had us wide-eyed. From the careful presentation to the creativity, the experience was outstanding. 12 Austin Food Trucks with Brick-and-Mortar Restaurants

by Anita @ Fearless Captivations

Austin food trucks sometimes become brick-and-mortar restaurants. Here are some of my favorites! It’s slightly funny to me that Austin is known for its food trucks. We usually have a short winter and a scorching hot summer, and winter and summer don’t provide the best weather for eating outside.Austin revels in the spring and fall for outdoor eating. Outside of spring and fall, I’d rather have a controlled environment that doesn’t involve sweating profusely, shooing away flies every 15 seconds, and getting eaten alive by mosquitos OR feeling a biting cold wind while eating as fast as I can so my food doesn’t get cold. All of this is why I’m glad some of Austin’s favorite food trucks have brick-and-mortar restaurants! Food trucks usually cost less than a brick-and-mortar, so you could say these food trucks have “made it big.” It doesn’t make these restaurants less weird or cool but it certainly gives them more benefits. Usually, those benefits include more parking spots, more solid kitchens, more menu offerings, alcoholic beverages, consistent hours, and climate-controlled environments. The great thing is, most of these food truck turned brick-and-mortar restaurants still have their trucks in action around town, in case you want to try the food truck. […]

Austin 360 Eats

It’s a classic case of the whole being worth more than the sum of its parts: Marinate pork in a mixture of fish sauce, garlic, red shallots and a touch of honey, sear the meat and then kiss it with a torch for a final bit of caramelization. You get a tangy, sweet, savory, smoky and transcendent

Goodbye CoolHaus, A Summer Meltdown

by Tony @ foodtrailersaustin

As some folks may know, we book trucks for a lot of events around town including the Hops & Grain Tap Room, Austin AzTex matches and Trailer Food Tuesdays. Moka Pot: Make espresso without the machine… at home (like an Italian!)

by Peter Tsai @ The Tasting Buds | Austin Food Blog

You don’t need to go to Starbucks or your local hipster coffee shop to get your caffeine fix. To get strong coffee, you don’t even need to buy an expensive espresso machine that hogs limited kitchen counter space either. If you want to make really eye-opening coffee that’s like espresso without the machine, make it … Continue reading Moka Pot: Make espresso without the machine… at home (like an Italian!)

Using The Pareto Principle To Market Your Food Truck

by Richard Myrick @ Mobile Cuisine | Food Truck, Pop Up & Street Food Coverage

The Pareto Principle (also known as the 80/20 rule, or the law of the vital few) states that, for many marketing, roughly 20% of your customers drive 80% of your sales. This means that there’s always a core group of loyal customers who not only spend money at your food truck, they bring their friends, give your truck glowing [...]

Flavors of the Month: December 2017

by Anita @ Fearless Captivations

Flavors of the Month is a monthly feature of some of the dishes and restaurants I enjoyed. I finished off 2017 with a solid month of eats in December. Thankfully, the excessive eating that usually happens around the holidays didn’t happen this year! It’s all about moderation, people. I was happy to try a new cidery (possibly my new favorite in Austin??) and of course, visiting my family for the holidays meant plenty of Chinese food. This month included Noble Sandwich Co, Taverna, Fairweather Cider Co, Veracruz All Natural, and more! Happy Hour at Taverna (Complimentary Austin Food Bloggers Alliance Event) Happy Holidays, indeed! Our Austin Food Bloggers Alliance had its holiday party at Taverna, an Italian restaurant in Austin. (We dined at their sister restaurant Toulouse last month.) They treated us to an array of appetizers, including bruschetta, arancini, butternut squash tortellini, pizza, and cannolis for dessert! Mac and Cheese with Pulled Pork from Noble Sandwich Co This mac and cheese dish has gouda and the pulled pork is tender and juicy. This is a winning combination! Noble Sandwich Co. got a new food trailer to fling their good eats outside of their two brick-and-mortar locations. On this occasion, they were a part […]
