It is time to gaze into the crystal ball. Don’t shake it or the yeast will start swirling amidst the hazy IPA inside. Here is what I think could happen in the world of independent beer in 2018. 1. Each year it seems that breweries get the idea that they should sell to the large Los Angeles beer market. We reap the benefit for a few months, but then the distribution flags and poof!; the brewery retreats. I expect this to happen again, but with more breweries flowing out than coming in for the first time. 2. 22-ounce bombers will fade quicker this year as more 16-ounce cans and 32-ounce crowlers take over. We are already seeing the re-emergence of the six-pack as well. 3. Taproom-only releases will start to be seen on beer shop shelves and more kegs will be spotted as well. Beer has to be made to a certain scale and if the beer sits at a brewery too long, it will eventually make its way elsewhere. 4. There will be at least four big buyouts / purchases as consolidation starts to take hold but SABInBev and their High End portfolio might be silent this year. 5.THE...

Bishop-born brothers Michael Kobayashi and chef Chris Kobayashi opened Artisan in Paso Robles, setting the bar for seasonal comfort food in the then-sleepy Central Coast town. In the past decade-plus, the area’s shown a far deeper culinary commitment level. Competition has grown, but Artisan continues to thrive. The brothers moved Artisan to Paso’s main square in 2013 and extended south in 2015, opening a cafe-bakery called Kitchenette in neighboring Templeton. Kitchenette limits their menu to breakfast and lunch. From 8 a.m. to noon, the Kobayashi brothers serve great versions of American classics like ricotta pancakes and corned beef hash, plus several Mexican dishes. I enjoyed their play on pork posole verde, a hearty Mexican hominy stew. They favor a thicker broth with a moderate amount of spice and tang. They pile on juicy seared pork chunks, quarter-sized cuts of linguica, creamy avocado, crunchy cabbage, savory crumbled feta, punchy jalapeño, and clipped chives. A crispy fried soft-boiled egg is sliced in half and sports gooey a yolk that draws the eye. A North Hollywood strip mall best known for Vallarta Supermarkets is now home to one of the Valley’s best Filipino restaurants: Tatang. Chef JR Martin and wife Chiho honor their cultural heritage in modern ways while tipping their caps to the past. The name Tatang translates from Tagalog to English as father. In this case, the father is JR’s late grandfather, dad to 16 children, including Martin’s mom, the family’s eldest child. From Tatang’s grill, I’d recommend ordering Li-em-po ($6.95). Thin slabs of heritage pork belly are marinated in tart calamansi juice, soy sauce, black pepper, garlic, and some water to thin out the sodium. Bellies are grilled until charred bits form, sliced into this strips that take dips in spicy vinegar, and served with cooling tomatoes. Dose of Vitamin P spotlights my favorite pork dish from the previous week.

Weekend brunch is a way of life in laid-back San Diego. After training for triathlons, going for their morning jog, or catching a few waves, people flood open-air restaurants to refuel (and then some). I’m not even training for anything, but was happy to carbo- and protein-load at TRUST Restaurant in an industrial, mixed-use Hillcrest building. Brad Wise runs TRUST and nearby Hundred Proof. His original restaurant features a glass and steel patio with red chairs; the dining room touts an open kitchen and diagram of pork parts, one of which tops a devastating “Trust Way” burger. Wood Grilled Burger ($14) is a beast at its core, with a juicy, well-seared patty piled with Asiago cheese, savory bacon-tomato jam, tangy pickled onions, and arugula on a soft poppy seed bun that soaks up the beef’s juices. Sure, each burger comes with skin-on French fries, but you should also bolster your burger by ordering Trust Way ($3). That means with house-cured, braised bacon and a sunny side egg that washes over the burger’s substantial, but balanced ingredients. The Los Angeles beer festival calendar starts with a bang as the second annual L.A. Beer & Food Festival returns to Mack Sennett Studios in Silver Lake on Saturday, January 27, 2018. This was a fun and more intimate festival than others with beer and food booths snaking through rooms and outdoors. This year the L.A. County Brewers Guild event features 50 of L.A.’s independently-owned craft brewers pouring beers that you can then pair with food. Transplants Brewing Turns 2, Ceremony + Anna’s Cider

I finally made a second visit north to Palmdale to join in festivities for the Transplants Brewing second anniversary bash. I was surprised at the variety of beers on offer (32 all told) as well as their growth in the brewing. I sampled eight beers from the list and was impressed by all save one that was probably just too green (The Bible Salesman). I really liked the Mecha Pronghorn that was one of many beers aged in Koval barrels. The Imperial Stout had loads of chocolate taste to it and was very smooth. I also tasted my first pastry stout with a great name of Cut & Pastry. It certainly did have a doughy sort of taste to it and though not my favorite was certainly well executed. IPA-wise, I tasted CatBirD which was brewed with Hop Hash and Hemp CBD; it tasted very nice with a near NE haziness to it. Fringe Element was a bit strong for an “IPA for Everybody” but I liked the taste of it and it paled to the two over 10% Triple IPAs on offer. Going back to the dark side, the Ultra Double Filbert was probably my second favorite after Mecha....

I’ve recently been visiting Ironsmith Coffee Roasters in Encinitas on Sundays to enjoy delectable baked goods from Crystal White and Wayfarer Bread, but the coffee bar is worth visiting in its own right. Raul Macias and Matt Delarosa launched Ironsmith to start 2015 and they’ve managed to accomplish a lot in a small space on Coast Highway. The art-lined cafe with black steel and light wood color scheme roasts coffee beans in-house and brews using a variety of methods. They take the process seriously and consider artistry when presenting drinks, even coffee-free drinks. Turmeric Ginger Latte ($5) is a recent triumph featuring raw spices, honey, and a choice of milk. Each latte is available either hot or over ice. Order the drink hot and each latte is steamed with a little bit of coconut oil to help the flavors bind together. The kicker is a fresh-cracked black pepper shower that adds contrast and a bit more spice.

Seasonal comfort food and specialty coffee has become much more prominent pairing in L.A. County since SQIRL and G&B Coffee co-habitated in 2012. Chef Kat McIver and partner/barista Angie Evans execute both facets beautifully in Long Beach at Wide Eyes Open Palms, which started at the Sunday Alamitos Bay Farmers Market and now exists near 4th Street’s Retro Row. The concept is clearly derivative of SQIRL, but has developed a distinctive charm. Brunch is the star at this tiny, but airy space that includes twin wood counters, art-lined white walls, and two sidewalk tables. WEOP celebrates multiple coffee roasters, rotating between beans from West Coast companies like Four Barrel from San Francisco, Heart from Portland, and during my visit, Augie’s Coffee from Redlands. Their two-group La Marzocco espresso machine helps fuel classics, plus specialty drinks like peppermint mocha and ginger cinnamon latte. The Schmancy ($5.50) is a cold brew mocktail inspired by the Old Fashioned, a cocktail that typically includes either Bourbon or Rye whiskey, a sugar cube, Angostura bitters, one Luxardo cherry, and often an orange peel garnish. In this case, Evans favors chocolatey, fruity coffees from countries like Ethiopia and Guatemala. [This version featured Guatemalan coffee from Augie’s.]...

Someone “liberated” a “tarantula” in a “common space” in “Hermosa” while a “Dojo” searches for Dankness masters, but it all flows back to the fact that it is “Chinatown.” Yes, that was a bit of tortured prose, but references some new breweries that are planning on opening in 2018. A partial list of interest includes the following breweries. Tarantula Hill Brewing Company will be the first brewery in Thousand Oaks thanks to a 2016 change in zoning regulations. Named after the tallest point in Thousand Oaks, this possible July opener will also serve Neapolitan pizza and homemade ice cream. Common Space Brewery will be joining Hawthorne’s suddenly hot scene this fall, following L.A. Ale Works to the land of SpaceX. Liberation Brewing Company adds to the growing list of Long Beach breweries when it lands in the city’s Bixby Knolls area.
