Hue Restaurant was voted Most Unique Chili at the 14th Annual WSME Rockabilly Chili Fundraiser this past weekend! Our Ho “Chili” Minh was based on a tradition Vietnamese stew called bo kho. Beyond pho on Oakland’s Vietnamese restaurant row Ten years ago, pho was the throughline that linked the Vietnamese restaurants on Oakland’s International Boulevard. From 2nd Avenue to 15th Avenue, laminated menu after laminated menu listed the same variations on Vietnam’s most famous soup. Much of what you’d order was the sweeter, more aromatic Southern-style beef noodle soup, with the occasional appearance of chicken pho. Over the past decade, most of the smoky cafes and soup parlors with sticky tabletops and fluorescent lights have faded out or, in the case of the marvelous Pho Ao Sen (1139 E. 12th St.), beautified. The broth has a faint and fetching anise note, almost like a Vietnamese bouillabaisse, and the noodles are covered in meats — braised chicken, prawns, roast pork — as well as herbs, ground peanuts and stiff twists of polka-dotted rice crackers. When you sit down at this 2½- month-old place — a burgundy-walled cafe with a koi pond in the front and a card room in the back — owner Kim Thuy will bring over a basket of fresh herbs and direct you to grab a drink from the refrigerators. The bun nuoc leo ($9), a specialty of their hometown, softens the ferocity of fermented fish with lemongrass and crispy roast pork, and Mien Tay’s anise-tinged chicken curry ($8) is as sweet and delicate as a tapioca pudding. Floating over the tangle of rice noodles are crab and shrimp meatballs, broth-drunk fried tofu, and fresh red and green cabbage. At this 5-year-old cafe, bun mam ($8.50-$9.25) made in the style of Soc Trang, a province southwest of Ho Chi Minh City, is so good that competitors up and down the stretch have begun advertising it on awnings and photocopied wall signs. First-timers may freeze at the first smell of mam ca, the fermented fish paste that flavors the cola-colored broth, but its sharp odor seems to disappear by the third spoonful. [...] the banana blossoms and herbs you’ve dumped into the bowl have melted into the soup, and your attention is captured by the bun mam’s depth and delicate sweetness, not to mention all the crispy-skin roast pork, prawns and poached fish your chopsticks bring to the surface.
