Chicken & Broccoli Bites

Chicken & Broccoli Bites

by Russ Crandall @ The Domestic Man

I’m going to keep this week’s recipe intro a bit short, because to be honest I’m a little distracted – we welcomed our second child into the world yesterday! His name is Elliott and I’m sure plenty of pics will soon be coming to my various social media platforms. I recently asked my readers what […]

Pork Belly Recipe for Bánh Mì (Vietnamese Sandwiches)

by Huy @ HungryHuy.com

At Vietnamese sandwich shops, you’ll find a dizzying number of meat options like grilled chicken, grilled beef, sardines, and even some Chinese influenced options like xíu mại. However, with Vietnamese sandwiches, pork seems to be king–you’ll always see pork options like chả lụa (meat loaf), thịt nướng (grilled pork), nem nướng (ground & grilled pork), bì […]

In June of 1800, Napoleon Bonaparte led the French army to a decisive victory against the Austrian army in Marengo (present-day Italy), an important battle during the French Revolutionary Wars. One of my favorite word nerd activities is making up new words. Where would we all be without frexcitement, fouscous, opkeptical, and now: jicamadas. What the devil is an jicamada? A tostada made of jicama, of course. However, if I want new readers to find my recipes, I need to give the recipes titles that regular people can understand. Amongst us friends, this recipe will forever be known as Vietnamese Jicamadas. Spicy Wok-Fried Chicken with Chilis (Chongqing Chicken)

by Diana Kuan @ Appetite for China

I had been meaning to update this recipe for a while. Whenever I teach Intro to Sichuan cooking classes, we focus on simple and easy-to-love stir-fry dishes such as Kung Pao Chicken, Mapo Tofu, and Dan Dan Noodles. But anyone who has spent enough time in good Sichuan restaurants is bound to eventually try a dish listed as Chongqing chicken, Sichuan chicken with chilis, wok-fried chicken, or a number of similar names. (Lazi jiding is the name in Mandarin.) And inevitably in every class, when I go around the room during the intro ice-breaker and have students list their favorite Sichuan dish of all time, at least one or two will mention this dish. When a student in a private class I recently taught requested we work on this dish, it reminded me of how long it has been since I made it at home. And so I decided to update this, making it extra crunchy with the method I developed for dishes like General Tso's Chicken and Chinese Lemon Chicken  in my cookbook. Lazi jiding (辣子鸡丁) is like a more sophisticated version of kung pao chicken . It's smokier, spicier (a lot spicier if you chop up the chilis), and only a bit more complex in its preparation. (The way I make it is more like shallow-frying. I use about 3 cups of oil, and dredge the chicken in a cornstarch-salt-pepper mixture beforehand.) Few fried chicken entrees are enveloped by such a succulent tongue-tingling sauce.

Chinese Shrimp with Black Bean Sauce

by Diana Kuan @ Appetite for China

I just came back from a long weekend of Chinese New Year celebrations in Boston, where I basically gorged on good seafood the whole time.  It's the double threat of being in a New England city known for its abundance of seafood, and being in the midst of the New Year celebrations where lobster, steamed fish, seafood nests, and shrimp and scallop stir-fries are de rigueur. So naturally, when I came back to New York earlier this week, I was still on a seafood high. And wanted to continue cooking it both for weekday meals and for sharing with you all on this here blog. Fermented black beans, if you're not already familiar with them through dishes like mapo tofu or black bean chicken, are very potent and tasty, but definitely not the most attractive ingredient in the world. They come prepackaged in either a plastic bag or a plastic or glass jar. The best way to describe the smell right out of the package is "super funky barnyard". That said, when cooked, they add a wonderful earthiness to Chinese dishes, so that's why we use 'em. However, if you do buy them in plastic, it's best to transfer them to a glass container with a tight lid, to store in the back of the fridge. That way, their lovely funky aroma won't bother anyone and they'll keep for a really long time.

Over 15 years ago we planted a little Washington naval orange tree. We always hope for the best for our new fruit trees and wanting them to adjust to our climate and hopefully, grow to be healthy and lush. Our philosophy is growing healthy trees comes first and then the fruit will come later. We…

Vietnamese Green Mango Salad with Shrimp (Gỏi Xoài)

Vietnamese mango salad (gỏi xoài) is a vibrant dish featuring green mangoes, shrimp, and is highlighted with fresh herbs like mint, thai basil and cilantro. These Vietnamese-style wings are inspired by a dish that's on the menu at NOLA Restaurant, Miss Hay’s Stuffed Chicken Wings. At NOLA the wings are deboned and stuffed and are to-die-for! These are simplified for the home cook but still have all the wonderful, aromatic flavors that we love in Vietnamese cooking -- lemongrass, lime, cilantro, ginger, and garlic.

Shrimp and Sausage Gumbo

Shrimp and Sausage Gumbo

by Russ Crandall @ The Domestic Man

Gumbo is a stew of Louisiana origin, dating back as far as the 18th century. As with Jambalaya, there are two popular versions of gumbo, Creole and Cajun; generally, the former includes tomatoes, while the latter omits them. It can be made with all sorts of meats, from chicken, to rabbit, to nutria, to oysters; […]

Having used up my vacation days writing a book earlier this year, I wasn’t able to join my wife and son during their summer trip to visit family in Hawaii. Sweet Chili Shrimp

by Diana Kuan @ Appetite for China

Summer nights are not meant for spending hours in the kitchen. My apartment is blessed with huge southwest facing windows, which let in tons of natural light in the winter, but come summertime that means the entire place is a furnace for most of the day. Turning on the AC before sundown does nothing. So naturally, if I make dinner before sunset, I need to be prepared to sweat a little. This all means that I need main dishes that take as little time as possible. Like this sweet chili shrimp dish. Whenever friends and acquaintances tell me they've tried my cookbook, about half the time they also tell me that this is the first recipe they try from it. Which surprised me...I would have thought something more of a restaurant staple like kung pao chicken, General Tso's, or lo mein, but I guess it was just the simplicity of the ingredients that lured them in. The tangy, sweet, and spicy sauce with an edge of garlic may seem complex, but actually requires few ingredients and less than 5 minutes of cooking time. I like eating it most with rice, but the sauce is also sublime poured over al dente noodles. And for all your lucky folks with outdoor space and grills, I'd also recommend marinating the shrimp in both the marinade and sauce, then grilling them instead. And next week, I'll be sharing with you some cookbook-related news! Stay tuned! __________________________________________ Sweet Chili Shrimp Serves 4 as part of a multi-course meal, or 2 to 3 as a main course * 1 pound large shrimp, peeled and deveined * 1 tablespoon peanut or vegetable oil * 2 teaspoons minced garlic * 1 teaspoon minced ginger * 1 shallot, finely chopped

Caldo Xóchitl (Simple Chicken Soup)

by Russ Crandall @ The Domestic Man

The weather is starting to cool down, so it’s time to share one of the many soups in my repertoire. Caldo Xóchitl is a simple chicken soup from Mexico, a carryover of traditional, pre-Columbian fare, when soup (and corn) were dietary staples in the region. The word Xóchitl itself means “flower” in the Nahuatl (Aztec) […]

Arroz con Pollo

Arroz con Pollo

by Russ Crandall @ The Domestic Man

Arroz con Pollo is a chicken and rice dish popular in Spain and Latin America. While its origin is difficult to trace, it is likely an adaptation of the Paella, a staple Spanish (Valencian) rice dish dating as far back as the 15th century. As with many dishes stemming from Spain’s exploration and colonization, Arroz […]
