Recipe: Healthy vegan Southwestern quinoa bowl

by the Blind Cook @ The Blind Cook

Happy new year, and welcome to 2018! I don’t really make new year’s resolutions because I believe self-improvement is something on which one should constantly work—I guess you could say I believe in year-round resolutions—but for most people, a new year marks new beginnings, a newer and improved version of yourself. This means many resolutions […]

Vegetarian Smashed Cauliflower and Roasted Asparagus Sandwich

by Todd & Diane @ White On Rice Couple

Back in my restaurant days, for the longest time the restaurant had made its mark serving just two meals a day. Saint Lucia Buns: Sweden’s Yuletide Pastries

by Dom Lorenzo and Vanessa Able @ Arousing Appetites: Home to the Serious Cook

We've got a new post at Arousing Appetites: Home to the Serious Cook that we wanted to share with you. We'd love to hear what you think.

Saint Lucia buns are Sweden’s answer to the mid-winter blues. Spiced with saffron and curled into a distinctively feline S-shape, consumption of lussekatter (literally, Lucy’s cats) peaks around 13th December, which is the day of the festival of Saint Lucia and the start of the run-up to Christmas. The poet John Donne might have said...

Every good Vietnamese cook needs to master this dipping sauce. It's used in many dishes to bring all the elements together. However, it can be easily botched, especially if your taste buds are not well versed in balancing subtle nuances between sour, sweet, salty and spicy. Additionally, flavoring with fish sauce is tough if you're not used to working with it everyday, not to mention the fact that fish sauce qualities differ from brand to brand and sometimes from lot to lot! Steamed Whole Fish with Ginger, Scallions, and Soy

Steamed Whole Fish with Ginger, Scallions, and Soy

Epicurious

This is a simple way to prepare whole fish, yet one that few Western cooks have mastered. In the Vietnamese culture, a properly steamed fish is a benchmark for chefs, and those who can't do it right are considered to be bad cooks. A perfectly steamed fish has flesh that is just cooked at the bone, never dry. Typically, whole fish are not served with the liquid in which it was steamed, which is too fishy tasting, and any sauce is added at the end, after the fish has been cooked. In this classic Chinese preparation, the fish is topped with scallions, cilantro and ginger, then doused with hot oil, which releases the flavor of the aromatics into the flesh of the fish.

Dipping into Vietnam / Three simple sauces work magic on almost any dish

Dipping into Vietnam / Three simple sauces work magic on almost any dish

SFGate

Similar to dressings, the sauces are served at room temperature and can be prepared in minutes. Take, for example, bun thit nuong, or rice noodles with grilled pork - a dish that I love to eat at the Ben Thanh market in Saigon. The last time I was there, I remember eagerly watching my favorite noodle vendor cook behind the glass case filled with jars of sauces. When she handed me my bowl, the sweet, savory aroma of grilled meat wafted in my face. The complex flavors resonated in my mouth - the slightly fermented taste of the soft, velvety noodles, the smoky meat, the crisp bean sprouts and cucumbers, the aromatic herbs and the crunchiness of roasted peanuts. No matter what mood you're in, be it for a salad, noodles or fish, the first step in Vietnamese cooking is to build a meal around a dipping sauce. Once you've rounded up a basic list of Vietnamese staples, have bought yourself an automatic insulated rice cooker (perfectly cooked rice is essential) and have mastered the following key dipping sauces, you're ready to recreate a whole host of mouthwatering Vietnamese dishes with ease. Nuoc cham, often referred to as Vietnamese Dipping Sauce, is a light-bodied sauce made by diluting with water nuoc mam, or fish sauce (a concentrated, pungent liquid extracted from anchovies fermented in brine), garlic, chiles, lime juice and sugar. In the U.S., fish sauce is available at Asian markets, specialty stores and some supermarkets. Chile-Lime Sauce makes a fabulous dipping sauce for boiled peel-your-own shrimp, steamed clams and mussels. No matter which recipes become your favorites, dipping sauces play a pivotal role in the overall meal.
