Pho! In Leicester! I was so so excited to find out Pho was moving to Leicester, taking over the space previously occupied by the World Buffet (see ya). For those who don’t know, Pho is a small chain of family-owned Vietnamese restaurants located in several large cities throughout England. They have loads of vegan-friendly dishes and the food is delicious and plentiful (I’ve visited a couple locations in London). We went on opening night, which I realise is a bit unfair for a review, but rest-assured it was all good. On their opening weekend they were offering 50% off all dinners (not including booze), and as you can imagine it was hugely popular. We arrived just before 6pm and there was already a queue out the door – which, much like our bellies, swelled as we ate. Luckily for us the wait wasn’t long, and we were seated by the big windows and looked after promptly. When asked about drinks, I did enquire if they had vegan beers, but they were unsure. As many of you know, Pizza Hut recently rolled out vegan cheese to all of its UK restaurants after trialling it in a few select locations for the past few months. When Pizza Hut made the announcement you could feel the vegan community rejoice – particularly because we were all scratching our heads about their choice of where to trial the pizzas (“why not in MY hometown??”). I really wanted to be one of the first to try the new vegan cheese pizzas, but unfortunately for one reason or another it just kept getting put off. It doesn’t help that the vegan cheese pizzas are only available at sit down restaurants, and not for delivery. I’m not sure why this is the case – but apparently (or so I’ve heard in the twitterverse) the reason is because the takeaway service is technically a different company(?)… Who knows. What I do know is that you can order pizzas for pick up though if you don’t want to eat in the restaurant. I’ve known about the Sneinton vegan market for a while now, and I’m slightly ashamed to say I’ve only just visited them for the first time recently. For those who haven’t heard of the market, it is a regular event in Nottingham that takes place on the first Saturday of every month from 11-3pm. It has been running for a couple years now, and was buzzing when we went a couple weeks ago. It’s smaller than the Leicester market, but that’s to be expected from a monthly market rather than the bigger one-off events in my hometown. That said, the hot food options were endless, and me being me had to try everything which means we absolutely stuffed ourselves! There were some of our faves there like The Vegan Grindhouse and Vegan Junk Food Notts, and some vendors that were new to me like Mission Pies. Vegan eggplant parmesan

Eggplant parmesan was one of my favourite pre-vegan dishes. One that I’ve loved eating since I was a kid, and one of the first dishes I mastered as an adult cooking on my own for the first time. It was even my go-to meal when I was trying to impress a boy – and just so happened to be the first meal I ever cooked my husband while we were dating. So I guess it worked! For my non-American friends, eggplant parmesan traditionally consists of breaded aubergine that is fried and then layered with mozzarella, tomato sauce and parmesan and baked in the over until bubbly and golden on top. It can be eaten on its own with salad and garlic bread (my fave) or even in a French bread roll as an eggplant parmesan sandwich (also very tasty). To veganize my dish, I used an egg replacement to coat the aubergine (in this case a powdered formula from Sainsbury’s) and vegan cheese. I also used nooch (aka nutritional yeast) in lieu of parmesan. The result? A pretty damn fine eggplant parm without the harm. It’s no secret that I’m partial to a tipple (or two!), and when a winery or brewery makes an effort to not only create vegan drinks, but actively market them as such, I fall in love. Step in Framework Brewery. I first came across these guys at a vegan market and then started to see their beers pop up around various pubs in Leicester. They are proudly vegan which is so refreshing. Here, I talk to Jonathan, one of the founders of Framework, about why they are passionate about producing vegan beer, and what their plans are for the future. How did Framework Brewery begin? We moved into the building that we are currently in at the beginning of November 2016, received our kit mid-November and started brewing at the beginning of December 2016. It’s no secret that the Orange Tree is one of my favourite pubs in Leicester. It’s cute, quirky and always has great music playing in the background. But most importantly, they’ve upped their vegan game significantly in the past couple of years. On their menu they regularly feature several different vegan starters, sandwiches, mains and desserts. And just this year they started a vegan only night called the “Veeg-Inn.” I went to the very first Veeg-Inn earlier this year and loved it. I even took two meat eating friends who were truly blown away by it (and one who said it got him thinking of going vegan). Since that first night, there have been a couple other vegan nights, each with a special theme. Last week I was delighted to have the chance to go again and sample their burger themed vegan night, which turned out to be a sell-out event packed with hungry vegans and the vegan-curious. For starters we had a couple drinks (vegan French red wine for me, Stella for him) and had onion rings and “frickles” (fried pickles) which were deliciously crispy.
