There is nothing more comforting to me than a roasted chicken. It’s one of my favorite meals. I crank up the oven and place the washed and thoroughly dried chicken in a cast iron skillet and wait for the crispy, salty goodness to cook. Once it’s brown and crispylicious I take it out of the oven, remove the chicken and deglaze the pan with whatever white wine I’m currently consuming.
